WINE OF ORIGIN: SWARTLAND
Manual harvesting of bush vine vineyards. After destemming the fermentation were maintained at a controlled temperature (24-26 °C) in an open-top tank. Pump-overs and rack & returns were done 4 times daily until fermentation reached 10°B, from then only once a day to promote freshness.

The perspective with this wine was to express the fresh red fruit characteristic of Cinsaut with very subtle and accessible tannins/extract. Aromas of red fruit, almost strawberry like were not overpowered with secondary oak flavours and for that reason it was matured for only 6 months in older 225lt barrels.
Most enjoyable with pasta and mild cheeses or to enjoy on its own.
