WINE ELABORATION:
Fully ripened Red Muscadel fruit were handpicked for this purpose at 27 °B. After crushing and destemming the cooled-down mash were left for 12 hours on the skins in temperature-controlled separators for enzymatic activity. During this time, we did two pump-overs to promote extraction and yield before the free-run juice were racked and fortified with Brandy Spiritus to 16.5% alcohol. For the next week the wine were stirred once a day in stainless steel tanks before it was racked to older 225lt oak barrels for an 18 month maturation period. The final wine was racked from the barrels before it was bottled by hand - using a coarse Olive oil filter and protocol.

TASTING NOTES:
Light pink colour with fresh red fruit aromas. The luscious, velvety entrance on the palate is supported with a balanced acidity on the mid palate with good length.
Being a full-sweet, ripe wine, it surely shows characteristics of pomegranate and raisins while filling your senses on the palate in anticipation for the next sip.

SERVING SUGGESTION:
After dinner with cheese or dessert.
